March Madness

It is madness! I did dinner duty on Saturday and Sunday this weekend. Here is Saturday:

Lots of basketball-watching these last few days. The husband and I are rooting for the Huskies … both Washington and Connecticut! Last night I decided to make Brinner (breakfast for dinner), to be well-fed before  for the Connecticut game (on the West Coast it was on around 6:30 pm, great timing).

I tried a new Buckwheat pancake mix, as Buckwheat is allowed on SB. Our standard “Heart Healthy” Bisquick Mix, while probably not terrible, isn’t on the SB list. The pancakes were interesting, but definitely needed a topping to be worthwhile, we all agreed. Especially Lily, who prefers a little pancake with her maple syrup. You can see a line of syrup across my pancake. I also used a little Brummel & Brown yogurt spread for taste.

Chicken sausage and a vegetable fritatta completed the meal. A little too much spinach on the frittata, and not enough cheese.

By now you know, too. The Huskies won… and the Huskies lost. What a weekend!

Mini Pancakes

When I was younger, my dad made pancakes on occasion. He’d make the “silver dollar” ones though. The “two-bite” size pancakes instead of the kind you would get at Denny’s, the ones bigger than your head. He’d make the smaller ones, but if we begged, maybe with the last bit of batter he’d make one big one. I can’t remember who got to eat the big one, though. By then we’d be full on previous batches of pancakes. Maybe my dad ate the big one.

Now that I’ve got a little tot distracting me all time time, I kind of get it. Make smaller pancakes because they cook faster than normal size ones. Same reason why at some point we started using angel hair pasta instead of spaghetti or linguine. Angel hair cooks a good 4 or so minutes faster than linguine. When you’ve got little brats like me running around, you need all the minutes you can get.

So, I eked out some mini-pancakes this morning, but didn’t manage to get the eggs cooked. The husband made one for me after the fact.

Barely got to eat the pancakes, either. Little girl has been c-r-a-n-k-y on account of a tooth coming in.

A post-rowing breakfast moment

Saturday practice was … if I recall, hard. Coach JPT returned, and the expected practice, 20s at increasing rates, was preceded by a ton of heavy drill work (rowing by pairs, then fours, then sixes. Then more rowing by sixes, etc. etc). The aforementioned “increasing rate” was never higher than 28 spm.

Saturday after practice I got roped into having a real breakfast at The Varsity in Fremont, rather than the standard Peet’s coffee & PCC breakfast that is our tradition. The conversation between Melissa and the Varsity waitress went something like this:

Melissa: About your French Toast. Is it, like, white bread?

Waitress: Well, it’s like an egg bread.

M: But, like, it’s not healthy or anything, is it?

W: No. No, nothing about the French Toast is healthy.

M: Good. I’ll have the French Toast with an egg, and one slice of bacon and one sausage link.

 

Yummm. Me, I had the pancake, one egg and 2 sausage links. Did I mention practice was hard? Well, at least, I thought it was.

Vacation

Today is the first day of my week+ vacation. Even though I am not going anywhere (the husband and I will be spending the next 10 days building a new deck!) today I decided to eat like I was on vacation.

Breakfast. I asked the husband if he wanted to go out for breakfast, but we were waiting for our deck wood delivery so it wasn’t really a possibility. Instead I made pancakes! Yum. Just your standard Bisquick pancake. I split one tiny pat of butter amongst the stack, then drizzled some pure maple syrup over the top. On the side you’ll see some white-flesh peach slices. Juicy, sweet, but not mushy. I love summer fruit!

Lunch. Thunderstorms greeted us throughout the night and into the morning. By 11:30 it was still raining on and off, with an occasionally sound of rolling thunder from far far away. It reminded me of growing up on the East Coast, back where thunder and lightening was the norm, not the exception. Home, of course, reminds me of great comforts food. Among the greatest comfort foods, ramen. I made myself a bowl of ramen, and added some snap peas (courtesy of the aforementioned CSA goodie box), an egg and sliced green onions. Definitely hit the spot.

Dinner: As I was on vacation, I decided to forego the husband’s menu for dinner. He had salad and leftover quiche. I made myself a new Seattle Classic (for me, anyway). Walla Walla onions are in season. They are sweeter than any other onion I’ve tried. They show up in stores in July and one of my favorite Walla Walla onion dishes is a simple grilled cheese sandwich, with a nice strong cheese, a nice artisan bread and some fresh, raw WWOs right in the middle. On this occasion I chose English Cheddar and Walnut Bread from Essential Bakery. The cheese at first didn’t appear to melt all that great, but the sandwich sat for a few minutes as I prepped the rest of the meal (simply potato chips and some more of those snap peas that I enjoyed at lunch), and soon enough the cheese was as gooey as it needed to be.
