Sunday Night Dinners

Sunday has become my night to cook. The husband has asked for at least a day off from cooking and at last I’ve gotten into the rhythm of a Sunday night meal. It gives us an opportunity to get out of the same-old routine. It also helps that I started the South Beach Diet approximately 2 weeks ago, so I’m all about looking for menus that have no grains, breads, sugars, etc as part of the meal.

Last week it was white bean turkey chili. Really tasty though I overdid it with the cinnamon and cocoa powder (was surprised that the recipe called for both, but they contributed to the flavor in great ways.)

Leftovers lasted for the next couple of days at work, which as also nice.

Tonight it was a great vegetable frittata that turned out really well. Smooth plating, set really well. A great alternative to our usual quiche and very SBD friendly. Best part of it was watching Lily eat it with one hand, like it was a candy bar (mmmm….candy bar)

Anyway, started up on SB because I’ve had these nagging last few pounds to lose since the baby. And yes, the “baby” is a toddler. She’s two. I’ve resisted going on SB because I really love bread and I really really really love sweets. I think in February I overdid it, though. What with the Valentine’s Day candy and the sweets at the office becoming a norm and not a special treat; and discovering caramel syrup in my lattes… definitely overboard. So on one Thursday (Feb 24 to be exact), I decided to take the plunge. On Saturday I headed to SB-land. On the Friday in between I got the email from my sis that my delivery of Girl Scout Cookies were in the mail. Argh!

I haven’t had a cookie yet, though a box of Samoas await me in the freezer. I’ve watched the husband and the daughter make their way through a box of Tagalongs and Thin Mints. I salivate at the thought. But when the time is right I’ll have my cookie and eat it, too. For now, I have to be honest. I get true enjoyment from watching the toddler have a cookie. (or as she sometimes calles it “kee-coo”. can’t get those syllables right all the time).

BTW, in Phase 1 of SB I lost those last stubborn pounds and then some. On to Phase 2!

Lily’s Birthday Cupcakes

She turned 2 so quickly. My is time flying. I took the day off work and we had a wonderful day together as a family. Breakfast at Sunflour Cafe. A trip to the zoo, where the weather was kind and the animals were out.

A nice long nap, followed by dinner and of course the obligatory cupcakes. I am including a pic of the cupcake without frosting, as the end result was kind of unimpressive.

Merry Christmas 2010

Hope you all had a good one.

Here is the pumpkin pie I made for Christmas dinner. I nearly forgot to include the spices. Had to mix them in IN the pie pan, as we waited for the oven to warm up. Good thing I didn’t pre-heat the oven or I wouldn’t have remembered before putting it in. That would have been one sad pumpkin pie.

Despite the setback, still tasty. Thank goodness for store-bought pie shells, I say!

Christmas Cookies
Did not get a chance to actually frost these. We ate them too quickly 🙂 The kiddo enjoyed “baking” with me. By that I mean she stood on the step stool and watched me do the hard work. Then I gave her a cookie cutter and she cut one or two of them out herself (The little elf in the pic? That one was hers)

I’ve got more cupcake pics … i feel like i take them all the time. Just gotta find them!

Trophy Cupcakes keeps me sane at work. It’s sad, but I’ve basically memorized their menu. The boss brought in a dozen cupcakes for a meeting yesterday. Someone asked what kinds they were and with barely a glance I quickly blurted out, “Pineapple Upside Down; Red Velvet; Samoas; Chocolate Vanilla”. People stared. “What??” I said. I hung my head a little bit sheepishly. Then had a chocolate vanilla. Yum.

Lily’s First Words

I wanted to write these down, lest I forget. Her first word, in my mind, was “shoe”. Still one of my favorites.

A rundown of Lily’s vocabulary:

Ode to the Cereal Aisle

The good news. I’ve lost those last stubborn few pounds of baby weight that have dogged me for the past 18 months. The bad news: my life is currently without many of those things I truly enjoy: carbs. Damn you, carbs. Now, I’m not on a low-carb diet officially, but when you start cutting these things out (or, like me, just reduce), the different in caloric intake is pretty impressive. We still enjoy, just fewer and further between.

I went to the store tonight to pick up some fresh fruit to have for me & the babe tomorrow morning. It was kind of nice, hitting the store at night after the babe has gone to bed. No child to entertain. No rush to get home to get dinner started. Just me, wandering the aisles. I stared at the yogurt section for so long the kid working the dairy section was concerned that I couldn’t find something. “No,” I said, “Just looking.” And I was. Compared greek yogurts. Reviewed ingredients and sugar grams. Contemplated different flavors before finally settling on a 6 oz container of Fage Nonfat Greek Yogurt (Eat This, Not That tells me, well, to eat this).

We haven’t had bread in the house for a few weeks. I innocently asked the husband what he thought about getting a loaf of bread for the freezer, so we could make the babe toast on occasion. All for the babe, of course. His reply was silence, which translates to I don’t want it in the house (he is also trying to reduce his carb intake. Neither of us could do it without the other.) Understood, as it is a proven fact that if we have it in the house he will eat it. Even if I hid it in my secret hiding place he would find a way and eat it. With all of this fresh in my mind I found myself standing in the bread aisle drooling at a loaf of bread. Picking it up. Sniffing it. Sort of fondling it. Dave’s Killer Bread was so squishy and soft. Mmmmm.

I perused the cereal aisle and that’s when I felt my heart rate rise. Oh, how I miss you, Autumn Wheat! Oh how tempting you are, Special K Vanilla Almond. My favorite flavors wrapped up in one big bowl of breakfast satisfaction. Until an hour goes by and I’m hungry again. As it turns out, there are better things to eat for breakfast than cereal. Like egg whites, lowfat cottage cheese and a dollop of salsa. Groan. I walked up and down that cereal aisle, and it was like seeing an old boyfriend. Kinda wanted to take a box home, but nothing good could come of it.

Aw, cereal isn’t THAT bad. I did relent and get some Heritage Flakes just the other day. But I could do better. “For the high fiber!” I told the husband. Sure, the fiber. He and I both know it’s because I. Love. Cereal.

I arrived home with no squishy bread and no yummy cereal. Just some nectarines, yams, that yogurt, some ginger and a Walla Walla sweet onion. (And my summer special, the heavenly Walla Walla Sweet Onion and Grilled Cheese Sandwich made with that sharp Beecher’s Flagship will likely turn into a Walla Walla Sweet Onion Quesadilla with reduced-fat cheddar cheese. Sigh).

BTW, that “Eat This, Not That” book I mentioned earlier is a fun read. Fortunately for us we don’t buy a lot of the crap they talk about in there anyway (packaged foods, frozen foods, etc), but the stuff they did call us out on sorta makes you look guilty (shame on you, Stonyfield Yogurt Smoothies, for having so much sugar!). Reserve a copy from your library today.

Egads, I’m really hungry now. Better break out those celery sticks.
