A few pumpkins watch as I eat, yup, some pumpkin pancakes. Sorry, guys.

The husband makes a terrific egg sandwich that we like to call, the Greg McMuffin. What, you didn’t know the husband’s name is Greg? Who exactly is reading this, anyway?

He recently added to his menu the McGregle Sandwich. Yes, the name needs some work. It’s essentially egg, ham and cheese nestled between two pancakes.

So for dinner one desperate Sunday night I decided to one-up him, and pull out the always popular pumpkin pancakes, and turned them into an egg sandwich, though, now I need a name for ’em.

Egg McCha-gle? No. Egg Pumpkin Pancake Sandwich? Boring. Chattycha’s Most Eggs-cellent Adventure?

Food Truck Stop

We’ve got some brisk food-truck business going on in downtown Bellevue. I’ve been frequenting the Paleo truck (Tuesdays) for a while now. Although, lately they have not been serving my favorite, fried plantains. Months ago some friends and I checked out the Skillet Street Food truck (Thursdays), though it’s pretty heavy for lunch, if you get what they are known for, burgers with fancy bacon jams, and not be health-conscious and order a kale salad like some people I dined with.

But there’s another food truck we just had to try. It’s been around for a while and my work spouse, EC, is very familiar with it as her Louisiana-born husband requires a certain level of soul food in his diet or risk self-destruction.

When work colleague Sam found out that the Where Ya At, Matt truck made a stop in downtown Bellevue (Wednesdays) he couldn’t stop talking about it for weeks. Not kidding. But I can’t blame him, and he did get us all to check it out, and it was most definitely definitely worth it. Especially because the boss-lady shared her beignets with us and OMG BEST BEIGNETS EVER.

Here is the oyster po’boy I got. It was crusty french bread and fried goodness and I ate the whole thing. I also ended up taking my other co-workers jambalaya home because he left it in my fridge and seriously, you’re going to leave it in my fridge? In my defense, he wasn’t feeling well and I waited a full day and then bought him his fancy SBUX drink later on so we’re even.

On a side note, the week after our group outing to visit Matt, Sam mentioned not very casually at all that it was Wednesday, which meant Matt was back. I had to put my foot down. I can’t do this all the time. I’m already over my limit, but I told him we’d do it again soon. There is too much on that menu that needs to be tasted

I’m lucky to work somewhere like this, with people like these.

If I was a good girl, I would bring my lunch to work every day and not spend money eating out. Seeing as how I’m just an okay girl, I feel lucky if I bring my lunch once or twice a week, usually Mondays and Tuesdays, when I have time to think and cook and stuff. Wednesday through Friday, it’s sort of up for grabs. Fortunately for me I work in downtown Bellevue, which offers a number of different establishments that have become my go-to spots when I don’t feel like going to the work cafeteria.

Here are a few places that have menu items that you can paleo-ize, or turn into almost-paleo meals.

Specialty’s. I always order online, because it’s way easier to order ahead of time then walk over and pick up. You don’t have to wait in line while people in front of you ask all sorts of questions. Also, online you can personalize, so always remove the focaccia bread and croutons. Ordering online also helps me stay one step ahead and not cave when a server asks if you want to add a dessert or pastry to your order. Here are my go-to salads with changes:

The Spinach-Bacon Salad, no croutons, no focaccia, and swap the poppy seed dressing with raspberry-walnut vinaigrette. There may be sugar in that dressing. I don’t drench it. I think I’ll live.

Greek Goddess. No feta, no focaccia, add chicken breast (again, the goddess dressing may have items in there, so either skip the dressing altogether or just use it sparingly)

Spicy Thai Peanut is good for off-paleo days, (note the peanuts in its name). But if you remove the won ton strips and focaccia and add the chicken breast, it’s grain-free.

Okay, so maybe all of them weren’t perfect. Let’s try again.

Evolution Fresh. You could probably get any one of the smoothies, and I used to be a Smooth Green girl for a long time until an EF lunch collided head-on with a stomach virus that has stopped me from ordering it ever again. Strawberry Mint, which they had over the summer, was a nice change of pace. I also like their Cucumber Pineapple Ginger juice, available at stores. I’ve only bought it once. Still it was delicious.

My current favorite order is the Lani’s Quinoa Spinach Salad. It seems it’s not on the web site so I can’t tell you the full official name, but it is in the Bellevue store. Here I ask them to remove the chickpeas, but add the grilled chicken breast. In addition to the quinoa and spinach there are other vegetables, herbs and seed mix and a lemon-tahini dressing.

My non-paleo usual is the Kevin’s Quinoa, Organic Kale & Butternut Squash Bowl. It includes feta and black beans, too, and uses a mild harissa sauce. I also have them add chicken.

Any of these can be served as a “simmer” with broth soup, or in a wrap, though I always order it as a cold salad.

I recently added Panera Bread to the lunch mix, because they have an unlisted Power Menu, perfect for Paleo. The “Power Mediterranean Turkey Salad” serves sliced turkey breast over lettuce, tomatoes, onions, peppers, kalamata olives and comes with a side of olive oil and lemon wedge. Super simple.

Finally, there is Jimmy John’s. Dear, sweet old Jimmy John’s. They actually have an option posted on the menu, called the “Un-wich” where you can order the sandwich without the bread and it comes wrapped in, well, I guess the lettuce and the paper. I always get the Turkey Tom (#4). Depending on if I’m feeling sassy or not I may order it with cheese. And, seriously, if I’m at Jimmy John’s I’m NOT going to skip the bread, are you crazy? There’s a reason why I go there, and it’s to get a SANDWICH and guess what, Sandwiches have BREAD. So, needless to say I haven’t been to Jimmy John’s in about three months. Sigh.

Pike Place Market, last week

A flashback to a couple of Saturdays ago. Some friends in town from Olympia, and since little Wyatt had never been to Pike Place Market, we decided to head down there to watch them throw the fish. I forgot to bring my camera, so I had to take some pics on Amanda’s camera, which she just sent along to me. We had a late lunch / early dinner at Sound View Cafe. A nice location, pretty busy, but I don’t think I’ll be returning. We had a chicken sandwich come to us, uncooked. Unappetizing, unfortunately. I had the tuna fish. Cooked.

The pics are nice. A bit dramatic, as Amanda’s camera had some feature turned on that turned all of the photos sort of soft, until we figured out how to get “back to normal”.

Vacation

Today is the first day of my week+ vacation. Even though I am not going anywhere (the husband and I will be spending the next 10 days building a new deck!) today I decided to eat like I was on vacation.

Breakfast. I asked the husband if he wanted to go out for breakfast, but we were waiting for our deck wood delivery so it wasn’t really a possibility. Instead I made pancakes! Yum. Just your standard Bisquick pancake. I split one tiny pat of butter amongst the stack, then drizzled some pure maple syrup over the top. On the side you’ll see some white-flesh peach slices. Juicy, sweet, but not mushy. I love summer fruit!

Lunch. Thunderstorms greeted us throughout the night and into the morning. By 11:30 it was still raining on and off, with an occasionally sound of rolling thunder from far far away. It reminded me of growing up on the East Coast, back where thunder and lightening was the norm, not the exception. Home, of course, reminds me of great comforts food. Among the greatest comfort foods, ramen. I made myself a bowl of ramen, and added some snap peas (courtesy of the aforementioned CSA goodie box), an egg and sliced green onions. Definitely hit the spot.

Dinner: As I was on vacation, I decided to forego the husband’s menu for dinner. He had salad and leftover quiche. I made myself a new Seattle Classic (for me, anyway). Walla Walla onions are in season. They are sweeter than any other onion I’ve tried. They show up in stores in July and one of my favorite Walla Walla onion dishes is a simple grilled cheese sandwich, with a nice strong cheese, a nice artisan bread and some fresh, raw WWOs right in the middle. On this occasion I chose English Cheddar and Walnut Bread from Essential Bakery. The cheese at first didn’t appear to melt all that great, but the sandwich sat for a few minutes as I prepped the rest of the meal (simply potato chips and some more of those snap peas that I enjoyed at lunch), and soon enough the cheese was as gooey as it needed to be.

Mmmmm …. vacation …

El Cubano

MM is doing a special this month (or maybe last), offering the “el cubano” sandwich from the deli. Their take on a cuban sandwich conjured up the idea for our “el cubano”: sliced pork loin, melted swiss cheese, barbecue sauce on a toasted panini roll. Rather than use a foil-covered brick to smash the sandwich down, I just smashed it with my hands. A little more fun. The work the husband puts into brining the pork for hours makes all the difference. Half of my sandwich sits in the fridge waiting for tomorrow. Unless the husband gets to it first. Grrr…

Super Bowl, Super Food

A lot of you (okay, a few) have asked me, not who I’m rooting for in the Super Bowl, but what I’ll be eating. Nothing special, actually. I woke up one morning last week and declared to the husband that I wanted Jimmy John’s. He was expecting this after getting a JJ’s flyer in the paper. So the sandwich in the photo is a Turkey Tom from Jimmy John’s. To the upper right, Triscuits with clam dip and a habanero smoked salmon spread. And some Maui potato chips. Of course, it’s balanced out by the celery and carrots (upper left). Hopefully loaded with clam dip and habanero smoked salmon spread.

Sandwich Heaven

Life isn’t always about rich foods, expensive ingredients and perfection simmering. Sometimes all I’m looking for is a really good sandwich. These are two sandwiches that you can’t go wrong with.

#1 The Vietnamese Sandwich. Back in my Capitol Hill days I would frequent a University District spot for these. Nowadays I treat myself if I’ve stopped by an Asian grocery store (like Uwajimaya). I’m not entirely sure what the meat is, other than it is some type of pork product. Surrounded by picked carrots, cucumber, chile peppers (which I promptly remove), cilantro and other seasonings. All on a softy/crusty French baguette.

#2 The other exciting news in the house is the new discovery that there is a Jimmy John’s sub shop in the aforementioned University District. There is another one in Redmond. Back in grad school my friend Rachel introduced me to the flavors of Jimmy John’s, a franchise sub shop that was all over Chicago. Turkey Tom was my usual, with the occasional Tuna sandwich for some variety. Unlike some franchise spots I frequented in other cities that did not translate when they finally came to Seattle (read: Chipotle), Jimmy John’s tastes just as good when I was a poor grad student as it does today, when I’m at least making enough to pay off my student loans (still, now and forever).
