Pineapple Cake Cookie Thingy

It’s Birthday Week. Woot! I asked the husband to tell my in-laws to refrain from making me my traditional pie this year. While a slice would be great, we both agree that an entire pie is a bit overkill, especially considering our efforts to reduce sugar intake (which is hard to believe, considering this current post and the one I just wrote as well).

It didn’t occur to me to mention this to anyone else. So imagine my surprise when a birthday package came in the mail from my parents, carrying one of my favorites:

These Pineapple Cake Cookies (I don’t really know what they are called), a Taiwanese treat, are lovely. A buttery shortbread surrounds a sweet, chewy, dense pineapple center. When I was younger my parents would buy these in small plastic containers with 10 or 12 of them per package. I could eat half that package in one sitting. I still can, I’m sure. The ones that arrived in my birthday care package were quite a bit more fancy. They are from a bakery in my parents’ San Gabriel neighborhood, and 2 cake-like cookies are freshly sealed in a smaller package. Perfect to share with the toddler, who shares my sweet tooth, and my love for pineapple cake-cookies. Especially perfect that the husband isn’t a fan of them (more for us). A little research on the Web brought up a homemade recipe. I’m not about to try to make them from scratch. The ones from the store are pretty good.

The ones from my Mom’s neighborhood bakery are pretty much divine.

I’ve had to stash the cookies in hiding place to avoid eating several in one sitting. These will hopefully last through the end of the month. At least (let’s hope) through the end of Birthday Week.

Flashback: January Cookies

Found this pic in our Pictures Folder. Got really into Snickerdoodles that the Metropolitan Market sold at the coffee counter. Then realized how easy they are to make. This was fun because I made the dough and kept in the fridge for the week. Every other night or so I’d bake a dozen. We didn’t overdose on cookies on any given day so we managed to keep them around for a little bit longer.

For anyone keeping score, I have had a couple of girl scout cookies since the trip to SB-land started. But just a couple of Thin Mints. Man are they good. I’ve hidden the last box of TMs in the house somewhere. We’ll be enjoying them later on in the year. As Lily would say, “Yum-MEEEEE!” You betcha.

Christmas Cookies
Did not get a chance to actually frost these. We ate them too quickly 🙂 The kiddo enjoyed “baking” with me. By that I mean she stood on the step stool and watched me do the hard work. Then I gave her a cookie cutter and she cut one or two of them out herself (The little elf in the pic? That one was hers)

Oatmeal Raisin, to go

My coach is hitting the road, and will meet us in San Diego later on this week. We send him off with treats and snacks for the trip.

oatmeal raisin cookies via chattycha on flickrAt the request of the coach’s sister, I am attempting a ‘healthy’ cookie here … oatmeal raisin. Made mostly from organic ingredients, I also slightly lowered the sugar content which one can hardly notice. Fresh out of the oven, there is a ‘cake-like’ texture to the small bite, which perhaps is due to the whole wheat flour / white flour combo I used. After they had cooled the cookie hardened slightly, making it a bit crunchier, though not exactly “hard”. My taste-tester, the husband, apparently “doesn’t eat cookies with raisins”. But I thought they came out pretty tasty.

I baked half the batch and put the rest of the dough in the fridge to bake tomorrow. Keep these suckers as fresh as possible for the road trip.

Cute Cookies

As you can tell from previous posts, I have a soft spot in my heart for cookies. Especially those from Italian maker Ambrosetti. Whatever the season or holiday, there is a cookie for it. I found these at MM, which I will be bringing into work tomorrow, to celebrate the (near) end of my jury duty stint. More on that to come. Back to the cookies. These are fun, festive and always tasty. Yes, I am bringing them to work, but the husband and I couldn’t help but give one a try. Don’t worry, co-workers, my hands were clean before I handled these for the three-minute photo shoot. No animals were harmed during the making of this blog post.

As I was making noodles for lunch today I stood in the kitchen and watched the husband go into the freezer and take some Thin Mints from an already opened box. The only box of Thin Mints I have. Then, he closed the box and put them back in the freezer.

What the frak?

They’re in the FREEZER so we can save them for LATER. That’s what everyone says. Buy a lot of cookies. Support the Girl Scouts. They freeze really well. You can enjoy them a month from now.

Noticing my shock, the husband replied that he would have had some All Abouts but since I hid them he went for the Thin Mints. Nevermind that he also said the night before, “Out of sight, out of mind” and that having the All Abouts hidden would assist in getting his cycling training plan back in motion. He told me to hide them, then punished me by digging into the reserves.

So, I unhid the All Abouts (simply in the pantry/cupboard, on a lower shelf) so that he would stop eating my Thin Mints. Too little too late, though. I tell ya. You just can’t win.

Girl Scout Cookies Time

The niece is a Brownie, and so this is the second year in a row we’ve purchased cookies for her Troop. Last year it was about eight boxes. This year, we reduced, to six.

Valentine’s Day. Sweet!

Just a day or two following New Year’s everything in the local grocery store turns red for Valentine’s Day. You could moan and groan and curse Hallmark for the commercialization of love, or you could just go with the flow and pick up some heart-shaped cookies. I chose the latter.

Last week, I tried a berry jam-filled cookie from Ambrosetti. It wasn’t actually filled as much as it was spread. Delicious:
